Single and Home Alone again but tired of eating salads, a sandwich, take home sub or pizza. This recipe for Shrimp and Pasta with Creamy Sauce is so versatile and so simple that even an artist could make it. In fact, all you need to master is the Creamy Sauce, then you can use this sauce with almost any protein or veggie of your choice with or without pasta. If you scour the internet for "creamy pasta sauce", you'll find tons of results and the ingredients and steps are nearly all identical. We've tried this recipe many times and it has never failed to please, give it try.

Protein:

  1. 1lb Shrimp
  2. Garlic Minced (Fresh)
  3. Cooking Oil and Butter
  4. Salt and Pepper to taste
  5. Old Bay Seasoning (Optional)

Creamy Sauce:

  1. 1/2 Cup Heavy Cream (aka Whipping Cream)
  2. 1/2 Cup Parmesan Cheese
  3. 1 Cup Reserved Pasta Water
  4. Salt and Pepper to Taste
  5. Red Pepper Flakes (Optional)

Pasta:

  1. Your Choice of Pasta
  2. Recipe measured out for half a package of pasta
  3. Reserve 1+ cup of pasta water after cooking

Finishing Touch:

  1. Peas
  2. Parsley
Shrimp with Creamy Pasta Sauce

First thing is to decide what protein or veggie you want to use with this dish. This recipe calls for Shrimp but you substitute with any protein or veggie you prefer. Try cooking your pasta ahead time so you have the 1 cup pasta water on hand and pasta is ready for final stages. This recipe goes very quickly once you have your protein/veggie cooked.

Protein or Veggie

  1. Prepare Shrimp, deveined and shelled
  2. Add Oil and Butter to your pan and heat to medium to medium high
  3. Stir in Garlic (optional) and cook for a minute or so, don't' let it burn or start to brown
  4. Stir in Shrimp, add seasoning of your choice, cook till pink and remove from pan

For the Sauce

  1. In the same pan, turn heat down to medium to medium low, add the cream, stir, let it heat up and add half of your reserved pasta water
  2. Once Cream and Pasta water heat up, add the Parmesan cheese and stir continuously
  3. Cheese will melt and your sauce will begin to thicken and become creamy, add a little more pasta water to control how thick you want it
  4. Turn heat down as low as you can or turn off, sauce is done **as advice, your cream sauce will continue to thicken, you may want to add a little more pasta water at this point even if it looks perfect

Finishing Touch

  1. Your sauce and pan should still be very warm
  2. Add in pasta a little at a time and mix well, add as much as you want but don't add it all at one time
  3. Add your cooked shrimp and juices and mix well
  4. Sprinkle with a little or a lot of parsley and at this point you're done
  5. Congrats, you did it! Serve while it's still warm
  6. You can add peas, broccoli etc and mix well, this will add a little color and possibly interest

So, just prep and cook your preferred protein and or veggie, they just need to be seasoned and fully cooked to your liking. Set it aside in bowl. Next using the same pan with the cooked bits, butter and seasoning, throw in your cream and reserved pasta water, after this starts heating up, add the cheese, mix well and continue to stir things together. You'll notice cheese will melt and sauce begins to thicken. Once you think you have the perfect consistency, turn heat to low and add pasta, mix well than add protein or veggie, mix well. Season with salt and pepper and or more parmesan to taste.

If you're watching your figure because nobody else is, a good substitute for pasta would be potatoes your way, rice or just protein with veggies. Fail safe one for me is pan fried salmon fillet with roasted potatoes all smothered with a cream sauce. I've never made this with anything other than Heavy Cream but I'm sure it's possible.

**Just remember, even when you think your sauce is perfect, it will continue to thicken when you start adding the pasta, the pasta will add starch, which will make your sauce thicker. I always add a little more pasta water even after I think my sauce is perfect. If you feel you added too much pasta water, just keep cooking sauce and it will continue to thicken. If you just want to make a cream sauce, use oil and butter, throw in your herbs, add your cream, use broth or stock as a substitute for pasta water and add your cheese, cook as above.
